Cinco de Mayo Party
I can’t believe April is almost over. Thankfully, it’s going to be a great couple of weeks! White House Correspondents Dinner, Gold Cup… And in case you are planning a Cinco de Mayo party, I partnered with Sauza tequila to share some ideas for a great girls night, including decorations, enchiladas, and Sauza Blue Sauza-Ritas! Those who know me know I’m not very domestic, so I promise everything here is simple as can be. See my pinterest board for more party ideas!

DIY Tissue Tassels: Take one sheet of tissue paper and fold it in half the long way, then twice the opposite way so you end up with a small rectangle. Cut thin strips of fringe along the unfolded edge of the tissue without going all the way to the folded end. Unfold the last two folds and cut the tissue in half (you will have two tassels). Open the two tissue pieces all the way and twist the solid center sections tight, creating a loop. Secure on string and hang!

enchiladas
Chicken Enchiladas: Preheat oven to 350 degrees F. Fill tortillas with cooked chicken, some corn and shredded cheese. Roll the tortillas and place in a baking dish. In a pot, melt 3 tablespoons of butter, adding 3 tablespoons of flour and whisking until thick. Add a cup of chicken broth, a can of cream of chicken, a cup of sour cream and salt and pepper. Continue whisking until thick and smooth. Pour the mixture over the tortillas and top with more shredded cheese. Bake for 30 minutes.
